Behind a glass door emblazoned with the letter é, just nine seats surround a steel-topped chef’s counter, set against a dramatic red glass wall and velvet curtain. Here, dinner unfolds as a show, with an ever-evolving tasting menu rooted in Spanish avant-garde cooking, exceptional ingredients, precise technique, and a playful sense of discovery.
